Palak Paneer

Ingredients
- 1 bunch palak (spinach)
- 2 cloves garlic
- 1 inch ginger
- 3 green chillies
- 2 tbsp oil
- 1 tsp butter
- 1 dried red chilli
- 1 tsp cumin
- 1 bay leaf
- 1 onion (finely chopped)
- 1 tsp ginger garlic paste
- ¼ tsp turmeric powder
- ½ tsp chilli powder
- ½ tsp coriander powder
- 1 tsp salt
- 1 tomato (chopped)
- 1 cup water
- 1 tbsp cream
- 250 grams paneer (cubed)
- ½ tsp garam masala
- 1 tsp kasuri methi (crushed)
Instructions
- In large pot get the water to a rolling boil and add in your spinach.
- Turn off the flame and allow the spinach to rest in hot water until the leaves are blanched (2 mins).
- Immediately, drop the spinach into ice-cold water. Once cool, transfer to blender.
- Add in the garlic, ginger, and green chillies. Then blend into a smooth puree.
- In a large pot heat the oil and butter. Add in the dried red chilli, cumin, and bay leaf. Saute on low flame until the spices turn aromatic.
- Now add the onion and ginger garlic paste; saute until onions turn golden.
- Keeping the flame on low, add turmeric, chilli powder, coriander powder and salt. Mixing well, cook until aromatic.
- Then add the tomato and cook until it becomes soft and breaks down.
- After that add in the puree prepared earlier and cook well.
- Add 1 cup water and adjust the consistency as required.
- Then add the cream, mix well making sure the consistency is attained as required.
- Add the paneer and simmer for 2 minutes.
- Lastly add the garam masala and kasuri methi. Be sure to mix well.
- Serve hot with rice or roti.
