Ingredients
- ¾ cup moong dal (yellow lentils)
- 1 ½ cups water
- 2 tablespoons oil (your preference)
- 1 teaspoon cumin seeds
- 2 teaspoons ginger (paste or grated)
- 2 teaspoons garlic (paste or grated)
- 2 green chilies (chopped)
- ½ cup red onion (chopped)
- ¼ teaspoon turmeric powder
- ½ teaspoon red chili powder
- 1 ½ cups palak (spinach) chopped
- 2 teaspoons lemon juice
- salt
Instructions
- Rinse the dal in a bowl 2-3 times or until the water is clear.
- Add your dal and water into a pressure cooker and cook on medium heat for 2 whistles.
- While the dal cooks, heat oil in a pot on medium heat. Once the oil is hot add cumin seeds.
- Then add the ginger, garlic, and green chili. Saute until the raw smell of ginger and garlic fades (30-40 sec)
- Now add the onion and a pinch of salt. Cook until onions are soft and translucent.
- Add the turmeric powder and red chili powder then mix well.
- After that add in the chopped spinach leaves and cook until the leaves are wilted (1-2 min)
- Finally add in your cooked dal (add water if necessary to achieve the right consistency). Mix well and let it simmer for 4-5 minutes. Stir occasionally while scraping the bottom to prevent any sticking.
- Lastly, add the lemon juice and salt to taste. Be sure to mix well.
- Serve hot with rice or chapati.
