Ingredients

  • ¾ cup moong dal (yellow lentils)
  • 1 ½ cups water
  • 2 tablespoons oil (your preference)
  • 1 teaspoon cumin seeds
  • 2 teaspoons ginger (paste or grated)
  • 2 teaspoons garlic (paste or grated)
  • 2 green chilies (chopped)
  • ½ cup red onion (chopped)
  • ¼ teaspoon turmeric powder
  • ½ teaspoon red chili powder
  • 1 ½ cups palak (spinach) chopped
  • 2 teaspoons lemon juice
  • salt

Instructions

  1. Rinse the dal in a bowl 2-3 times or until the water is clear.
  2. Add your dal and water into a pressure cooker and cook on medium heat for 2 whistles.
  3. While the dal cooks, heat oil in a pot on medium heat. Once the oil is hot add cumin seeds.
  4. Then add the ginger, garlic, and green chili. Saute until the raw smell of ginger and garlic fades (30-40 sec)
  5. Now add the onion and a pinch of salt. Cook until onions are soft and translucent.
  6. Add the turmeric powder and red chili powder then mix well.
  7. After that add in the chopped spinach leaves and cook until the leaves are wilted (1-2 min)
  8. Finally add in your cooked dal (add water if necessary to achieve the right consistency). Mix well and let it simmer for 4-5 minutes. Stir occasionally while scraping the bottom to prevent any sticking.
  9. Lastly, add the lemon juice and salt to taste. Be sure to mix well.
  10. Serve hot with rice or chapati.
