Palak Paneer

Ingredients

  • 1 bunch palak (spinach)
  • 2 cloves garlic
  • 1 inch ginger
  • 3 green chillies
  • 2 tbsp oil
  • 1 tsp butter
  • 1 dried red chilli
  • 1 tsp cumin
  • 1 bay leaf
  • 1 onion (finely chopped)
  • 1 tsp ginger garlic paste
  • ¼ tsp turmeric powder
  • ½ tsp chilli powder
  • ½ tsp coriander powder
  • 1 tsp salt
  • 1 tomato (chopped)
  • 1 cup water
  • 1 tbsp cream
  • 250 grams paneer (cubed)
  • ½ tsp garam masala
  • 1 tsp kasuri methi (crushed)

Instructions

  1. In large pot get the water to a rolling boil and add in your spinach.
  2. Turn off the flame and allow the spinach to rest in hot water until the leaves are blanched (2 mins).
  3. Immediately, drop the spinach into ice-cold water. Once cool, transfer to blender.
  4. Add in the garlic, ginger, and green chillies. Then blend into a smooth puree.
  5. In a large pot heat the oil and butter. Add in the dried red chilli, cumin, and bay leaf. Saute on low flame until the spices turn aromatic.
  6. Now add the onion and ginger garlic paste; saute until onions turn golden.
  7. Keeping the flame on low, add turmeric, chilli powder, coriander powder and salt. Mixing well, cook until aromatic.
  8. Then add the tomato and cook until it becomes soft and breaks down.
  9. After that add in the puree prepared earlier and cook well.
  10. Add 1 cup water and adjust the consistency as required.
  11. Then add the cream, mix well making sure the consistency is attained as required.
  12. Add the paneer and simmer for 2 minutes.
  13. Lastly add the garam masala and kasuri methi. Be sure to mix well.
  14. Serve hot with rice or roti.
